Bone broth for tasty meals and better health

Tis’ the season for comforting meals made with healing and wholesome bone broth.

Gut and immune health are top of mind this time of year, which makes glycine-rich bone broth one of our go-to winter staples for jazzing up everything from rice to soup!

Try making your own with this recipe we love inspired by Brodo the next time broth is on the menu. All you need is:

  • 3 lb chicken feet
  • 12 lb chicken backs and necks
  • 3 large onions, peeled and roughly chopped
  • 6 celery stalks, roughly chopped
  • 2 large carrots, coarsely chopped
  • 5 bay leaves
  • 1 T black peppercorns
  • 1 bunch flat-leaf parsley
  • Fine sea salt

Now put it all together!

  1. Put all the chicken parts in a 16-quart pot, add cold water to cover about 2-3 inches, then bring to a boil over high heat for 1 hour.
  2. Skim off the foam every 15-20 minutes.
  3. Immediately after the liquid boils, reduce the heat to low and pull the pot to one side so it’s partially off the burner.
  4. Simmer for 1.5 hours and skim once or twice.
  5. Add the veggies, bay leaves, peppercorns, and parsley, pushing them down into the liquid.
  6. Continue to simmer for 3-5 hours. Check once or twice to make sure the bones are still fully submerged.
  7. Use a spider skimmer to remove the solids and discard. Strain the broth through a fine-mesh strainer and season with salt to taste. Let cool.
  8. Pour the cooled broth into storage containers and refrigerate overnight. Then spoon off any solidified fat and store for up to 5 days in the fridge or freeze for up to 6 months.
